Barhi Dates
The Barhi date is considered the sweetest and creamiest of all dates. As it has a lower-than-average astringency, this date is edible during all three stages of ripeness (Khalal, Rutab, and Tamr).
The Khalal stage is ONLY harvested in September. It is the first edible stage of
Barhi Dates, at which the fruit reaches maximum weight and size and has low
moisture making the fruit crispy, and sweet, with a bright yellow color.
In the rutab stage, dates become soft and very juicy. They can be harvested like this, but are very delicate and need to be handled very carefully.
In general, the Barhi date provides a varying degree of sweetness depending upon its ripeness level, ranging from fresh sugar cane to coconut and butterscotch.
They are smaller and more spherical than other varieties and are often still attached to the vine when sold in their unripe, yellow stage. The yellow Barhi date has a golden matte finish and a crunchy apple-like texture with a slight sweetness and mild astringency.

Medjool dates
Medjool dates have a rich, almost caramel-like taste and a soft, chewy texture
whereas regular dates, commonly called Deglet Noor, are usually smaller and have a firm flesh and a sweet, delicate flavor.
As tropical stone fruits, they have a single pit surrounded by edible flesh.

Native to Morocco, Medjool dates come from the date palm tree (Phoenix
dactylifera) and are now grown in warm regions of the United States, the Middle
East, South Asia, and Africa.
They’re often sold dried but not dehydrated, making them soft and sticky. Their
sugars become more concentrated as they dry, which further increases their
sweetness.
Medjool dates are healthy! They contain natural sugar, but they have a low/medium glycemic index score because they also contain a good amount of fiber, which slows the release of the carbohydrates and gives you sustained energy rather spiking your blood sugar crazy high. They’re also low in fat and packed with nutrients like potassium (50% more potassium by weight than a banana), copper, magnesium, vitamin B6, niacin, calcium, iron and vitamin K.
